Nitrates
Contaminants whose increased concentration in the environment and food is a consequence of human activity in agriculture (excessive use of nitrogen fertilizers) and breeding animals. Although not particularly toxic to the human body, the products that they may produce (nitrosamines) have a carcinogenic effect.
