Enterobacteriaceae
Intestinal bacteria are part of the normal gut microflora. They include the genera Salmonella (pathogen), Escherichia (potential pathogen), Shigella (pathogen), etc. Their presence in foods is an indicator of fecal contamination, ie insufficient hygiene during the production, storage and handling of foods. Foods that detect the presence of enterobacteria are considered to be defective. Isolated microbiological swabs from surfaces, hands of personnel and accessories indicate fecal contamination and insufficient cleaning, washing and disinfection.
