Common name for toxic compounds found in food. They can be its natural constituents or an unnatural ingredient that results from the contamination of food in the production chain. They can enter the food uncontrollably from the environment or there may be residues of the treatment used by man at different stages of production. Therefore, contaminants are substances that are not intentionally added to food but are the result of contamination of food during production, packaging, transport, processing of food or are the result of some natural processes. Chemical contaminants found in food: mycotoxins, enterotoxins, dioxins, polychlorinated biphenyls, pulicyclic aromatic hydrocarbons, acrylamide, chloropropanols, residues of cleaning agents.
